Honey Glazed Grilled Chicken with Mashed Potatoes

The use of the word grill refers to cooking food directly over a source of dry heat, typically with the food sitting on a metal grate that leaves grill marks. We can all agree to the fact that grilling is probably one of the best ways to cook meat, especially when it comes to chicken. The smoky flavors make it an ideal canvas for playing around with sauces.

Ingredients: -

For Chicken:-

Chicken fillets - 2 nos, Salt- 1 tsp, Crushed Pepper- 1.5 tsp, Honey- 3 tsp,

Soy sauce - 1 tsp, Butter - 2 tsp, Oil- 3 tsp, Crushed garlic- 4 big pods.


For Mashed Potatoes:-

Medium-sized potatoes - 4 nos, Salt- 2 tsp, Melted butter- 2 tbsp, Heavy cream- 1/3 cup,

Garlic Pods- 3 nos, Coriander- 1/4 cup.


Preparation:-

- Keep the chicken fillets in a mixing bowl.

- Sprinkle salt & crushed pepper evenly. Pour the olive oil over it & add the crushed garlic.

- Mix everything well to coat evenly.

- Set aside for around 30 mins.

- To prepare the honey-soy glaze, mix 1 tsp of soy sauce & 3 tsp of honey in a bowl. Mix well & keep aside for glaze to be used later.

- For boiling carrots(or any veggies of your choice), take a saucepan & boil water. Once it comes to a boil, add salt, mix well & add the veggies. Boil the veggies on high for around 5 mins. Should still be a little crunchy.

- Strain & wash it with cold water to retain the color & stop the cooking.


Step By Step Process:-

For Mashed Potatoes:-

  1. Peel the potatoes and place it in a bowl of cold water, to avoid discoloring and oxidizing.

  2. Cut them into one-inch cubes. This way they're gonna cook more quickly and evenly. Add your potatoes to a pot of cold water and add a very generous pinch of salt. This is gonna help build the layers of flavor as the potatoes cook, which means you'll need less salt down the line.

  3. Now we're gonna bring the potatoes to a soft boil over high heat. Once you've reached a soft boil, reduce the heat to low and simmer for about 12 minutes.

  4. You'll know your potatoes are ready for mashing when they're fork-tender. Go ahead and remove the pot from the heat and drain the potatoes through a colander. At this point, you're actually gonna place the potatoes back in the pot over medium-high heat and stir them around for 2-3 minutes. That's gonna release any excess moisture. At the end of this, the potatoes should be super dry.

  5. Use a fine-mesh sieve. Place the boiled potatoes in the sieve, and use a spatula to gently push them down. (Do not use a food processor or a hand mixer. This is gonna over-work the potatoes, creating a gummy like paste.)

  6. Add melted butter to the mashed potatoes and mix it well.

  7. Add heavy cream to a small saucepan over medium-high heat. Add some garlic and coriander leaves to enhance the flavor (You can also add some other herbs and ingredients of your choice). Bring the heavy cream mixture to a simmer and strain out the garlic and other herbs through a sieve. And then add just the cream to the potatoes little by little until they are fully incorporated.

  8. Your potatoes are finally ready to serve.


For Chicken:-

  1. Take a grill pan & add a 1 tsp of butter and spread it evenly.

  2. Once hot, add the chicken fillets one beside the other. Grill on high heat for around 3 mins.

  3. Turn them on the other side & continue to grill for 3 more mins. on the other side. - Lower heat to medium & keep pressing the chicken pieces with the spatula for the chicken to cook & get the grill marks.

  4. Turn it on the other side & repeat.

  5. Check if the chicken is cooked.

  6. Now take a basting brush & brush the chicken pieces with the honey-soy glaze. Turn the fillets on the other side.

  7. Again brush the other side with the honey-soy glaze & turn it over. The color should be evenly browned.

  8. Grill both sides for 1 min each or less. Take care that the honey-soy glaze does not burn.

  9. Remove onto a plate.

  10. To sauté the vegetables, take another pan & add a tsp of butter. Spread it and once hot add the boiled vegetables. Sauté on high for 2 mins, sprinkle some salt & crushed pepper. Mix & sauté for 2 mins.

  11. Serve the grilled chicken with a side of the veggies and mashed potatoes.
