Prawn Ghee Roast Recipe


Ingredients

For Kundapuri Paste:

  • 4 Dried Kashmiri Chilies

  • 4 Dried Byadgi Chilies

  • 1 tsp Peppercorns

  • 1/2 tsp Cumin Seeds

  • 1/4 tsp Mustard Seeds

  • 1/4 tsp Fenugreek Seeds

  • 1/4 tsp Khas Khas (Poppy Seeds)

  • 2 tbsp Thick Tamarind Pulp

  • 8-10 Garlic Cloves

  • Salt (to taste)

  • Water (as required)


For Prawn Marination:

  • 200 g Prawns (cleaned and washed)

  • 1 tsp Turmeric Powder

  • Salt (to taste)

  • 1/2 Lime (juice)


For Tadka:

  • 3 tbsp Ghee

  • 10-15 Curry Leaves

  • Salt (to taste)


Process

  1. Marinate the Prawns:

    • In a bowl, combine the prawns with turmeric powder, salt, and lime juice.

    • Mix well and let it marinate for 15-20 minutes.

  2. Prepare the Kundapuri Paste:

    • Heat a pan and add the dried Kashmiri and Byadgi chilies and roast them on a low flame.

    • Add the black peppercorns, cumin seeds, mustard seeds, fenugreek seeds, and khas khas.

    • Once roasted, let the mixture cool, deseed the chilies and then transfer the mixture to a grinder.

    • Add tamarind pulp, garlic cloves, a little water, and salt, and grind to a fine paste.

  3. Cook the Paste:

    • In a pan, heat ghee and add the prepared paste.

    • Stir continuously until the paste releases its oil and becomes fragrant.

  4. Cook the Prawns:

    • In another pan, heat a tablespoon of ghee.

    • Add the marinated prawns and roast on high flame for about 3-4 minutes or until cooked through.

  5. Combine:

    • Add the cooked prawns to the paste and mix well.

    • Toss in the curry leaves and combine thoroughly.

    • If the mixture is too thick, add water to reach your desired consistency. Adjust salt to taste.

  6. Serve:

    • Your Prawn Ghee Roast is ready! Serve hot with Neer Dosa.
