Rogan Josh (Kashmiri Pandit Style)


Rogan Josh is an authentic Kashmiri style lamb curry with thin and lesser gravy and a thick layer of oil floating on top. There are two different versions of this dish. Kashmiri Muslims and Kashmiri Pandit versions. Kashmiri Muslims prepare it with onion and garlic while the Pandits do not use onion garlic and use only yogurt to make it.





Recipe

Region/ cuisine: Indian(Kashmiri)

Main Ingredients:

½ cup Mustard oil, 3-4 Cloves, 1-2 Green cardamom, 500 gm mutton, ¾ cup curd, few strands of saffron, 1 tsp Dried ginger powder(sonth), ½ tsp Fennel powder,

¼ tsp Asafoetida, 1 ½ tbsp Kashmiri red chili powder, ¼ cup Mutton stock, Salt to taste,1-2 Ratan jot(Alkanet), ½ cup ghee.


Process:

Heat a saucepan, add mustard oil, cloves, green cardamom, mutton and saute well.

In a bowl, add curd, saffron strands, dried ginger powder, fennel powder, asafoetida, Kashmiri red chili powder and mix well, transfer it into a saucepan.

Add salt to taste and let it cook. Add little mutton stock mix well and cover it with the lid.

cook till the meat is tender.

In a pan, add ghee, ratan jot(to get red color) once it leaves the color, strain the mixture, and transfer it into the saucepan and mix well. (Can skip this part if ratan jot is not available. Instead, add additional 1 tbsp Kashmiri red chili powder)
